Simranjeet Singh/Shahjahanpur: If you come to Shahjahanpur, the heritage of martyrs, and do not taste the chaat here, then you are doing injustice to yourself. People like the chaat made in different ways here. Kanhaiya ji’s Paani Batashe i.e. Golgappa found in the City Park of Shahjahanpur is also very famous. People come here from far and wide to eat these batashas.
Deepak, owner of Kanhaiya Ji Chaat Corner, said that he has been selling chaat for a long time. The spice tikkis made here are very famous. But along with that they also sell water bottles. Whose taste is also different. Deepak told that the taste of Batasha is so good that he is not able to meet the demand of the customers. Every day their stocks run out even before the shop closes.
This is how water-based batasha are prepared
Deepak told that first of all we prepare batasha from semolina. These Batashas are very crunchy. Due to which their taste becomes even better. Deepak told that he uses many types of local spices to prepare water. Which are ground on a mortar and mixed with water. In this water he tempers asafoetida, black pepper, fennel, cumin and coriander with desi ghee. Because of which this water is very tasty. To maintain the quality of water, dry mango juice is available. No chemicals of any kind are used to make water sour. He also boils the peas to be planted along with the batasha and grinds them well. Due to which the taste becomes even better.
Customer demands are not met
Deepak told that he sets up his chaat corner at 5 pm and till 10 pm customers come to his place to taste the chaat. But there is so much demand for his batashas that his batashas get exhausted every day at 8 pm. They sell 800 to 1000 daily. At Kanhaiya Chaat Corner, 6 packets of water are available for Rs 20 and 6 packets of curd are available for Rs 30.
